Finished in an Oloroso sherry cask.

 

Bright fruit grounded by subtle smoke and saltwater. Delicate yet full-flavored.

Nose: Warm, grassy fields and fresh hay complemented by subtle aromas of cinnamon sticks, grilled pineapple, wild strawberries, and poached pears.

Palate: Rich and generous with notes of unripened mango, orange blossom honey, cream soda, and lemon curd, with pops of strawberry jam and cherries jubilee.

Finish: Long and pleasantly peppery, with Maldon salt-topped dark chocolate and gently receding smokiness.
