New to Edition Three of The ImpEx Collection are four Agave expressions distilled and bottled in Mengoli de Morelos Miahuatlán, Oaxaca
The Agave is roasted in an oven containing Encino and Yegareche (Quercus spp.), Mesquite (Prosopis spp.), or Palo de Aguila (Alnus acuminata) then milled by Ox drawn tahona. After fermenting from 3-8 days in open air sabino (Taxodium mucronatum) tinas, the spirit is double-distilled in Copper Alambiques with refrescadera in which the water is changed one time during distillation.
Meet the Mezcaleros:

They are related to the neighboring Ramos family via Felipe’s wife (Ageo’s mother), Cesilia, whose sister Cleotilde is married to Victor.
Felipe has been a mezcalero for almost 60 years
Victor and Emanuel Ramos

All four of these new expressions were hand selected by ImpEx’s Vice President, Chris Uhde who said of these new additions, “Our selection of these Agave expressions was held to the same rigor as our whisky and rum expressions. Agave is delicious and adventurous; we hope that everyone who has enjoyed expressions from The ImpEx Collection will delight in these limited editions as well.”
